Pumpkin Herb Butter Lasagna


This cozy, fall-inspired lasagna is a favorite in my household for the past few years, combining rich layers of creamy ricotta, savory pumpkin, and a fragrant béchamel sauce infused with sage, rosemary, and garlic. The sweetness of the pumpkin blends beautifully with warm spices like cinnamon and nutmeg, while the spinach and mozzarella add a fresh, melt-in-your-mouth finish. Béchamel Sauce Layer

  • 6 tbsp salted butter

  • 10-12 sage leaves

  • 2 sprigs rosemary

  • 6 cloves garlic, minced

  • 2 tbsp dried oregano

  • 1/3 cup all-purpose flour

  • 3.5 cups whole milk

  • 1/2 cup apple cider (or vegetable broth)

  • 4 cups fresh spinach

Pumpkin Layer

  • 15 oz whole milk ricotta

  • 1 cup pumpkin puree

  • 1 large egg

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1 cup grated parmesan

  • Salt & pepper, to taste

Cheese/Pasta Layers

  • 3 cups shredded mozzarella

  • 1 package no-boil lasagna noodles


Directions

  1. Preheat the oven to 375°F (190°C) and lightly grease a deep 9x13-inch baking dish.

  2. Prepare the béchamel sauce: Melt the butter in a medium saucepan over medium heat. Add the sage leaves and rosemary sprigs, cooking until they’re slightly crisp, about 2 minutes. Remove and set aside for garnish, if desired.Stir in the minced garlic and dried oregano. Whisk in the flour, ensuring there are no large clumps.

  3. Make the sauce: Slowly pour in the milk while whisking constantly, followed by the apple cider (or vegetable broth). Increase the heat and bring the mixture to a boil, whisking for about 5 minutes until it thickens. Season with salt and pepper. Stir in the spinach and cook for 1-2 minutes, until wilted. Remove from heat. This is your béchamel sauce!

  4. Prepare the pumpkin layer: In a bowl, combine the pumpkin puree (blot with a paper towel if watery), ricotta, egg, cinnamon, nutmeg, and parmesan cheese. Season with salt and pepper to taste.

  5. Assemble the lasagna: Spread 1/4 of the béchamel sauce evenly in the bottom of the lightly greased casserole dish. Place a layer of lasagna noodles on top to cover the bottom. Spread 1/3 of the pumpkin ricotta mixture over the noodles and then sprinkle with mozzarella. Repeat the layers until you've used all the filling/sauce, ending with a final layer of mozzarella and a sprinkle of some additional parmesan on top.

  6. Bake: Cover the dish with foil and place it on a baking sheet to catch any potential spills. Bake for 40 minutes. Remove the foil and bake for an additional 20-30 minutes, until the cheese is bubbly and golden.

  7. Rest and serve: Let the lasagna rest for 10 minutes before slicing. Serve warm and enjoy!
